An upbeat chef with a lot to offer

Alexandre Auger took over from Dominique Frérard behind the stoves in the Sofitel Marseille Vieux-Port restaurants at the beginning of this year. The new executive chef’s challenge is to get to grips with the place and gradually make it his own without upsetting his predecessor’s legacy. He comes from the Roches Blanches kitchens in Cassis, knows the regional products well, and sets store by them. The will to respect their seasonality and typicality is well-anchored in Alexandre Auger’s cuisine. “The stunning view of the Old Port provided to guests in the Sofitel’s restaurants and bars complements my Mediterranean cuisine perfectly. The Carré Bistromanie brasserie menu will gear towards sharing, with regular supplier meetings; in the Dantès Skylounge bar, you can enjoy tasty tapas with good wines and cocktails. The cuisine here is so much in tune with conviviality! The chef reveals his inventive talents in the Les Trois Forts gourmet restaurant. He adds his little “twists”, as he calls them, to southern dishes, inspired by somewhere else, punchy but always good. “Marseille is a port; every flavour in the world has found its way here,” he explains.
“I don’t cook for photos, but I attach great importance to visual first encounters with my dishes. Fragrances and aesthetics trigger a craving, and flavours satisfy it. An inseparable trio for a great signature.” And you can feel the dynamism and sense of sharing. His cuisine, like his life, is like that: on the move and an offering.
