Fine dining with the sea and moon. With Francesco Fezza at the helm, the gastronomic restaurant at Château de Théoule is a creative, contemporary place. The young chef has taken the best ideas and recipes from his native Italy and his travels in France and Japan. The amazing Discovery set menu is his signature. The cuttlefish tagliatelle with herring roe, avocado and kaffir lime is a marvel, as are the Carabineros king prawns with rhubarb and tosazu bisque. The aged amberjack with white strawberries and asparagus yuzu kosho is unique, the Provençal pigeon royale with cereals and preserved cherries unforgettable. The desserts, by young Simona Casato, take inspiration from the region and the season. You’ll enjoy an extraordinary moment on the terrace, with the whole bay in full view.
