His mature, creative gourmet cuisine celebrates the produce of the valley below. Diners delight in the lobster tartare with tapenade made from olives from the garden, the luscious artichoke soufflé with sabayon and parmesan or the Mediterranean sea bass with local courgettes and a lemony butter emulsion.
