It’s rare for a fine gourmet not to love good wine. And when a passionate connoisseur like Stéphane Ulmet is also a former Michelin-starred chef, it’s easy to follow his advice on food and wine pairing. Yet wine is his true passion, and the boy who used to collect bottle labels and glue them in a precious notebook has realised a dream. He fell in love with the Côte d’Azur, found the perfect premises in Old Nice, and by 2015 was working as a wine merchant and sommelier or, as he likes to put it, a ‘winemaker’s salesman’ at La Cave de Stéphane. He has become a ‘snooper-taster-sharer’ of nuggets he has unearthed in France. He knows the identity and history of the producers he meets, and he bases his choices on artisans with respect for nature who use integrated, organic, or biodynamic work methods. 

He has set up his shop to showcase his wines differently – not classifying them by region, but by the type of wine that goes with a particular dish or food type. With over 350 products to choose from, some of the low prices may come as a surprise, but that’s because he’s always looking for the best value for money. “I want to be an everyday wine merchant, not just for Sundays and public holidays. Bordeaux, Burgundy, Alsace... all the spirits are French and the Grand Sud has a special place. Stéphane’s treasures include champagnes and sparkling wines from winegrowers whose fine, affordable vintages are now coming our way. In addition to the home delivery service, orders for rare vintages of grands crus classés arrive in the shop within 48 hours.
