Using direct and indirect cooking methods over a wood fire, he integrates charcoal smoke in his dishes, expertly drawing out the flavours of the finest products from land and sea. Don’t miss the grilled octopus with a melted chimichurri sauce, the string-smoked salmon and select cuts of meat (wagyu steak, beef Tomahawk, confit lamb shoulder, smoked free-range chicken, glazed ribs, etc.).
