The 5-star hotel continues its revamp, with completion of the first stage approaching fast, no minor one as it involves the reopening of that essential eatery on the Principality’s gourmet circuit: Le Grill. Regulars will appreciate its lightened-up, more contemporary appearance but will be pleased to note the place has lost none of its superb. That’s how Hôtel de Paris manager Ivan Artolli wants it and how chef Patrick Laine is doing it: the rotisserie lords it over the place and the Mediterranean-Tuscan terroir is king. The produce – king prawns, mussels, squid, lamb – sits proud on the plate in all “simplexity”, meaning that an apparent spontaneity of flavours and assemblages is based on irreproachable, artifice-free mastery and technique. Just one word: bravo!
