Muse found! Kevin Altier, the new chef of the M, the Hôtel Muse’s intimate restaurant, promises a cuisine based on select seasonal pro­duce grown by local market gardeners. After Club 55 and the Mareyeur restaurant in Grimaud, Altier has spent the last five years at La Bastide de Saint-Tropez – a reference! Generous, inventive and meticulous, his cooking takes us on a journey packed with Mediterranean colours and tastes, from Italy through Provence and Camargue to Catalonia. His signature dish? Local red mullet stuffed with Taggiasche olives and ris­otto with Iberian chorizo.
