Muse found! Kevin Altier, the new chef of the M, the Hôtel Muse’s intimate restaurant, promises a cuisine based on select seasonal produce grown by local market gardeners. After Club 55 and the Mareyeur restaurant in Grimaud, Altier has spent the last five years at La Bastide de Saint-Tropez – a reference! Generous, inventive and meticulous, his cooking takes us on a journey packed with Mediterranean colours and tastes, from Italy through Provence and Camargue to Catalonia. His signature dish? Local red mullet stuffed with Taggiasche olives and risotto with Iberian chorizo.
