Revisit your classics. Le Siècle has had a facelift. This chic brasserie’s timeless décor may remain the same, but things in the kitchen have changed. Chef Cyril Breteau, alias “BioMan”, is now in charge of the restaurant. A forerunner of local, plant-based cuisine, he grows the edible flowers that adorn his dishes in the hotel’s hanging garden. On the menu, he navigates between Mediterranean specialities and French recipes. Suggestions include semi-cooked amberjack with rocket emulsion and ginger sauce, flash-cooked scallops with granny smith apples, spinach and blackberries, bottarga and sauce vierge... He also reinvents Le Siècle’s must-try dishes such as flambéed crêpe Suzette. Enjoy it all on a sunny terrace facing the sea.
