Located on the top floor of the already iconic Maybourne Riviera, Mauro Colagreco’s ultra-respectful marine restaurant guarantee you an unparalleled contemporary gastronomic experience. Assisted by his chef de cuisine Andrea Moscardino, the multi-starred chef cooks seafood in all its forms and works with local, sustainable fish. He uses unique conservation techniques with the help of a “maturation chamber”. The sauces, broths, and condiments – tuna belly matured with kombu seaweed and XO sauce; sea lettuce ravioli, king prawns and citrus fruits; pink sea bream, corn texture, sea razor clams, and microalgae sabayon – vibrate with the intense flavours and richness of the Mediterranean depths.
