The Nice Airport Radisson hotel has opened a new bistro serving sunny southern fare. Gaëtan Debes, the young chef, earned his stripes in Paris and Cannes, notably under Christian Sinicropi at La Palme d’Or**. His menu here has a local slant: œuf parfait with organic egg, two textures of chickpea, sea bream tartare, kiwi and avocado cream with mint, petits farcis niçois , baked pollack with creamy cauliflower purée.
