The Ramatuelle boutique hotel’s chef interprets Provençal cuisine his own way! In keeping with his motto: “humility, passion, sharing.” Romain Franceschi garnishes dishes with colourful modern bistronomy that goes well with the stylish Tropezian hinterland hotel designed by the architects Humbert & Poyet. You can try, for example, pig fillet lacquered with UP red wine, jus reduction, celeriac with coffee and poached beetroot with UP rosé or a verbena-infused lobster with heirloom tomatoes and burrata... Ingredients come from local producers, the fruit and vegetables from the vegetable garden at Château Saint-Roux—another MDCV group nugget. Dishes with great terroir taste you can enjoy on the terrace overlooking the vineyard.
