A gourmet terrace between sky and sea
In the heart of the medieval village, at the iconic Chèvre d'Or, chef Tom Meyer's third table offers a spectacular view of the castle gardens and the sea. A suspended space where the chef and his teams celebrate the seasons and regional produce, where the sharing starters are inspired by beautiful Mediterranean street food, such as the Arancini with its almost soufflé-like lightness or the Pissaladière with its thin, crispy bread dough. The Tuna Ceviche is a red symphony: purple shiso, cherry, pomegranate, and beetroot. With its aioli sauce, the marine-inspired Paella brightens the plates, and the melting shoulder of lamb is smoked with eggplant caviar and black garlic. For dessert, the Coconut Frosted with Lime and the Strawberry Melba deliver intense pleasure. A total success for experiencing La Chèvre differently, in chiseled simplicity.
