Rampoldi celebrates the Alba white truffle in Monte-Carlo

Just steps from the Monaco casino, the Rampoldi has embodied the Mediterranean fusion of elegance and conviviality since 1946. Chef Antonio Salvatore, originally from Guardia Perticara in the Basilicata region, who gained international experience in England, Spain (notably at the El Chaflán restaurant) and Russia, has been at the helm of the kitchens since 2016 and earned a Michelin star in 2021 for La Table d'Antonio Salvatore, its fine-dining establishment.

His philosophy: to choose the best ingredients and preserve the original flavor of each. Deeply rooted in the traditions of southern Italy, his cuisine embraces international techniques within this Belle Époque setting of marble, wood, and crystal chandeliers. "My work consists of choosing the best ingredients and showcasing them... while preserving the original flavor of each ingredient," he explains.

This season, the chef dedicates an entire menu to a favorite ingredient: the white truffle of Alba. Cream of potato with a gratinéed poached egg, Piedmontese-style beef tartare, tagliolini, Parmesan risotto with hazelnuts and a meat sauce reduction, fillet of turbot or beef: all the dishes highlight the aroma of this precious tuber without overpowering it. A journey through Monegasque elegance, exceptional ingredients, and the magic of the white truffle of Alba.
