After leaving Terre Blanche in 2010 for the Royal Palm Beach in Marrakech, this gifted chef, a Best French Craftsman since 1993, is back again fully determined to catch back the two Michelin stars he won at Le Faventia in 2009. A worthwhile challenge for a man who adores fine produce and learnt all about southern flavours from Roger Vergé at Le Moulin de Mougins in 2000.
Le Faventia, redolent of the South
The chef is in charge of all four of the resort's restaurants, but it's in the gourmet Le Faventia that he really expresses his creativity through generous, flavoursome dishes. On his spring menu we notably find Mediterranean-style courgette flowers (a nod towards Roger Vergé); John Dory studded with basil, Riviera seasoning, golden jus, tomato with herbs and aubergine socca; and sautéed veal cutlet, agnolotti ravioli stuffed with burrata cheese, morel mushrooms in golden jus and chantilly cream with yellow wine. A real tribute to the local terroir, to savour on the magnificent terrace edged with Mediterranean trees.
