The Var resort has lots of new attractions this season, so why not take advantage of the good weather to (re)discover this little corner of paradise?
With 115 private suites and villas, a 3200m2 spa, 2 tennis courts, an infinity pool, 2 of Europe's most prestigious 18-hole golf courses and 4 restaurants, this haven of peace in the Provençal hills is more than ever THE perfect place to enjoy some memorable time out. Especially as Philippe Jourdin has returned to head up the kitchens, marking a major
gastronomic turning point for this jewel in the Var hotel industry's crown. After leaving Terre Blanche in 2010 for the Royal Palm Beach in Marrakech, this gifted chef, a Best French Craftsman since 1993, is back again fully determined to catch back the two Michelin stars he won at Le Faventia in 2009. A worthwhile challenge for a man who adores fine produce and learnt all about southern flavours from Roger Vergé at Le Moulin de Mougins in 2000.
Le Faventia, redolent of the South
The chef is in charge of all four of the resort's restaurants, but it's in the gourmet Le Faventia that he really expresses his creativity through generous, flavoursome dishes. On his spring menu we notably find Mediterranean-style courgette flowers (a nod towards Roger Vergé); John Dory studded with basil, Riviera seasoning, golden jus, tomato with herbs and aubergine socca; and sautéed veal cutlet, agnolotti ravioli stuffed with burrata cheese, morel mushrooms in golden jus and chantilly cream with yellow wine. A real tribute to the local terroir, to savour on the magnificent terrace edged with Mediterranean trees.
