He may have left his two stars behind him at the Château Saint-Martin & Spa (Vence) but he’s out to retrieve them quickly for the Faventia, the Domaine de Terre Blanche’s gourmet restaurant. As a Best French Craftsman (2004), Franques is truly a master of his art but he knows too how to make us forget technique and sophistication by composing dishes whose main achievement is to thrill the senses: Bresse capon accepts without compromising being served with chocolate macaroon shards, fennel and Taggiasche olives lightly seared, while John Dory is accompanied by aubergine and coriander caviar and a carrot and cumin sabayon. And of course his signature Mystery of the Egg on this top-flight menu adding more pleasure to a luxury resort not short on assets.
