The gilded splendor of the 17th century, retro-chic furnishings with sculptural lines, and a resolutely contemporary energy: Le Versailles has just reinvented itself. The legendary bar of the Negresco unveils a new interpretation of its vibrant and radiant elegance, where heritage and modernity engage in a subtle dialogue.
Conceived as a place to live at any time of day, Le Versailles now offers a complete culinary experience: French breakfast in the morning, light lunches ranging from Caesar salad to beef tartare, and tapas until midnight in the summer. As for cocktails, Jonathan Emeriau, head of N Les Bars, has created a fresh and dynamic menu, with little or no alcohol, whose signature Purple Velvet (champagne, elderflower liqueur, blueberry infusion, and Madagascar vanilla) sets the tone.
Another must-see is the gourmet trolley, available every day from noon to 17 p.m., featuring creations by pastry chef Yann Le Douaron. Citrus tarts, strawberry shortcake, travel cakes: French pastry celebrated with freshness and precision. All accompanied by a hot drink, with a glass of champagne available as an option.
