Cédrat gives way to Koshō, a 2-in-1 culinary concept

After eight years delighting the people of Marseille with Le Cédrat, chef Éric Maillet and his partner, chef Maëlyss Vultaggio, are opening a new chapter, both in the kitchen and in their personal lives. Still located at the same address, with its pleasant patio shaded by a fig tree and its open kitchen, they are trading their old formula for a completely redesigned concept. "We needed to do something different and have schedules better suited to our future life as a family of three," explains Maëlyss, also known as Mama Kuyna.

From this desire for balance was born Koshō, a project that reflects their personalities and draws as much from their travels as from their memories. Its name refers to yuzukoshō, a Japanese condiment from which they have retained the spiciest part: a way of announcing a cuisine full of character.

At lunchtime, the atmosphere is intentionally simple and relaxed. You order the daily specials, sandwiches, and seasonal treats at the counter, all listed on chalkboards and updated as often as possible depending on what's available and the chef's inspiration. Southeast Asian influences are present on the menu, which can be enjoyed in the dining room, now decorated in a vibrant yellow, under the fig tree in the patio, or taken away.

On Friday and Saturday evenings, the concept changes. Koshō transforms into a Mediterranean-style Izakaya (Japanese pub). Here, diners share a multitude of dishes served simultaneously, accompanied by sake, beer, or cocktails. The €48 "full table" menu features dishes such as mature amberjack, apricot, bottarga, trout roe and verbena, or karaage (Japanese deep-fried fish), gochujang mayo, and citrus condiment. This menu emphasizes that raw fish (often), barbecued dishes, and reimagined street food are the cornerstones of this decidedly contemporary, worldly cuisine.
