A new chef will shine a new star at La Table de Tourrel starting this Saturday in Saint-Rémy-de-Provence.

In Saint-Rémy-de-Provence, this Saturday, January 17th, La Table de Tourrel reopens its doors with a new chef at the helm: Thomas Cavasin. A welcome arrival, carefully considered in keeping with the DNA of the establishment, which has held a Michelin star since 2019.

Trained under renowned figures in gastronomy, notably Michel Keyser in Nîmes and Anne-Sophie Pic in Valence, Thomas Cavasin then took over as Head Chef at La Dame de Pic in Paris (1 Michelin star) for the past two years. He now unveils a cuisine perfectly aligned with the spirit of the place and deeply rooted in the Provençal terroir: red mullet, tellines (small clams), truffles from the Gard region, Gariguette strawberries from Carpentras, asparagus from Cavaillon… culminating in caviar sourced from Château Castillonne near Montpellier. This commitment is made possible thanks to reliable and loyal partners such as Mathieu, a Camargue fisherman (Côté Fish), Aurélien, the gardener at the kitchen garden in Eygalières (Mas des Fidèles), and numerous carefully selected regional farmers.

The cuisine at La Table de Tourrel doesn't seek effect but rather precision: refined, legible dishes, built around a central, magnificent ingredient. "We don't reinvent what nature gives us, we create around what already exists in order to make it refined and elegant," summarizes Chef Thomas Cavasin.

Another notable change: the dining room, formerly located on the ground floor, has been moved upstairs. Now situated on the upper floor, it offers an even more intimate and exclusive atmosphere. The large modular table, seating 12 to 16 guests, provides a convivial experience overlooking the fully open kitchen, which is an integral part of the dining room. Every action is visible, and the dishes are explained at the table by the Chef and his team.

In this space, ancient stones blend seamlessly with ultra-contemporary elements: oak wood, brass, black mirrors, and clean lines. A warm and Zen-like aesthetic that echoes the refined cuisine. Arrival is via a discreet cul-de-sac, behind a 17th-century gate, via a majestic staircase, like stepping into a timeless interlude.

At La Table de Tourrel, the promise is clear: to offer a contemporary interpretation of the Provençal art of living, without artifice, with rigor and sincerity. A rare restaurant, demanding yet accessible in its intent, that speaks to a clientele seeking genuine emotion.
