Nestled in the heart of Domaine La Pierre Blanche in Eygalières, L'Ambar returns for a new summer season, enhanced by the arrival of Maëva Serthelon, a young, promising 26-year-old head bartender. Inspired by the raw beauty of the Alpilles, she reinvents mixology as a tribute to the flavors and light of Provence. Each cocktail becomes a miniature taste, built around seasonal ingredients, herbs from the maquis, and artisanal spirits such as Manguin aperitifs or Avignon olive liqueur. Creations like the Rosé Mule with homemade tonka syrup or the astonishing Smoky Shadow with mezcal and roasted pepper bear witness to this sensitive and rooted approach. The setting, for its part, plays the card of elegant relaxation: hammocks facing the vineyards of Domaine de Valdition, pétanque at sunset, musical ambiance and themed evenings like the 80's night on July 24. The plate is not left out with a menu of refined tapas signed Romain Serradimigni, chef of the restaurant l'Opale. Iberian ham, stracciatella with pistachio pesto, Puglian artichokes or truffled croque-monsieur: each bite celebrates the generosity of Mediterranean products.
A confidential place, L'Ambar embodies this peaceful and sunny Provence that we savor in the golden glow of the evening, when the vines are tinged with amber... like a nod to its name.
