Are you familiar with the Omakase concept? "I'm putting my trust in you": you sit at the counter and place your trust in the customer. At Kōyō, this principle is taken to its utmost in this new ten-seat Tokyo counter on Rue Emma et Philippe Tiranty.
Behind the bar, chef Naoki Shizuka orchestrates each service with clockwork precision: rice temperature, fish fillet, seasoning calibrated to the second. Alongside him, Geneviève Endozo adds a contemporary touch without straying from the established style. The name Kōyō means autumn leaves. It wasn't chosen by chance: here, they celebrate the ephemeral, the season, the moment.
Four services per day, four different intensities: Roken at midday to discover, Satori at 13 p.m., Komiageru at 19 p.m., and then Irikomi in the evening for total immersion. Petrossian caviar, Jamart truffles, and D-VINE grand cru wines complete the picture.
